  • 3/4 cup granulated sugar
  • 1 lemon zested
  • 2 large eggs room temperature
  • 1 tablespoon fresh lemon juice
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon table salt
Glaze
  • 3/4 cup powdered sugar
  • 1 1/2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Method
 

Brownies
  1. Preheat the oven to 350 degrees F and spray an 8 x 8 inch baking pan with cooking spray.
  2. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl and set aside.
  3. Beat the unsalted butter, granulated sugar, and lemon zest until light and fluffy.
  4. Add the room-temperature eggs one at a time, mixing well after each addition, then scrape the bowl.
  5. Add the lemon juice and flour mixture to the bowl, mixing just enough to combine.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 20-25 minutes, or until a toothpick comes off with no moist crumbs attached.
Glaze
  1. Whisk together the powdered sugar, lemon juice, and lemon zest in a small bowl.
  2. Pour the glaze over the cooled lemon brownies and spread evenly with a rubber spatula.
  3. Let the glaze set, then cut the brownies into 16 pieces.
