- Preheat oven to 325 degrees F and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together the oil and honey, then add the eggs and whisk until blended.
- Add the pumpkin purée, milk, pumpkin spice, baking soda, vanilla, and salt, and whisk to blend.
- Switch to a big spoon and stir in the flour until just combined; fold in any additional mix-ins if using.
- Pour the batter into the prepared loaf pan, sprinkle with cinnamon, and create a swirled effect by running a knife across the batter in a zig-zag pattern, if desired.
- Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the loaf pan for 10 minutes, then transfer to a cooling rack to cool for 20 minutes before slicing.
